What you'll need:
1 cup jasmine rice
1 cup coconut milk
1 cup water
2 teaspoons lime zest
Salt and pepper
In medium sauce pan, combine rice, coconut milk and broth. Simmer, covered for 15 minutes. Remove lid and fluff rice with a fork. Mix in like zest. Serve!
Simple side dish with big flavor!
